It’s too hot to come think of something to make for dinner, so I’m stealing somebody else’s recipe for you instead, and you don’t even have to cook it. The cook book is called Alfred Portale’s Simple Pleasures, which is a pretty good book, but he stole the recipe himself (borrowed) from a friend of his called Ms. Cleaver. Whomever she is, I like her already.
Chop up some seedless watermelon into a bite sized chunks. Mix it with slivers of red onion, diced cucumber and grape tomatoes. Season it with lime or lemon juice, olive oil, salt and pepper, and some fresh mint. I love this with French feta cheese on the side and Turkish flat bread.
