If you ever get hot dog or hamburg guilt, don’t worry about it. Buy organic and make a relish. My mother, my sister and my grandmother have been on Block Island all week, and they are famous for not cheap-eats, but cheapest eats. They will order a hot dog and fries between them, a couple of tap waters, and then load up on the free corn relish that comes with, from Finn’s at Old Harbor.
Use 1 1/2 cups of cider vinegar, the juice from half a lemon, 1/2 cup of water, 2/3 cup of brown sugar, 1/2 teaspoon of dry mustard, a bay leaf, 2 teaspoons each of celery seed and mustard seed. Add a scant teaspoon of salt.
Combine all of the liquid in a stainless steel pot. Bring to a boil and add the corn from 10 ears, 1 large red bell pepper, 1 chopped yellow onion, 1 rib of finely diced celery and 1 cup of shredded cabbage. Keep cooking over medium heat for about 10 minutes until the liquid has reduced. Cool to room temperature before using. Taste for salt, cayenne or tabasco.
