I’m too tired to make dinner tonight. It’s Pizza Friday at Pre-K 111 for lunch, and it’s going to be Pizza Friday at home for dinner.
Just in case you have someone coming over tonight though, and you want to do something easy and delicious, how about a little fresh pasta?
Pour 2 cups of flour into a little hill in a bowl or on a board and then make a well in the middle. Add 2 eggs, beaten in the well, along with 2 tablespoons of olive oil and 3 tablespoons of water. Mix it together with your hands, then knead for five minutes. Let it rest under a towel for 15 minutes. Fold it in three’s like a letter and run it through the pasta machine on the lowest (widest setting) 2x, then fold it in two’s for about 5x. Then run it through without folding, adjusting the rollers each time to a higher number until it is how you like it. (usually the highest setting, or the one before)
Hang it everywhere on chairs.
Reduce some heavy cream by a third with a few good pieces of lemon zest (remove the pith), a whole uncut garlic clove with the top and tail removed, a sprig of thyme, and a peppercorn. When the garlic is soft, it’s done. Pass the whole thing through a sieve, squishing the garlic through as well with the back of a spoon.
Cook the pasta just for about 2 minutes and then drain well. Coat with your cream, grate on some Parmigiano Reggiano and then rip on a little basil. You don’t really need anything else.
