Surgery is not always necessary

Don’t be ashamed of a repeat performance. How many people do you know that say “I am so sick and tired of my favorite restaurant always serving the same old, tired, absolutely delicous whatever-it-is.” I don’t know why when it’s time to make dinner I think I have to reinvent the solar system. There is no law that says everything always has to be different. If you make the best pigs in a blanket, fruit skewers coming out of a pineapple, or juicy roast chicken with mashed potatoes and a mushroom ragout or homemade noodles with a meat sauce or whole roasted fish that was flapping that morning or chip and beer combinations, then there may be no need to make a change. Take Italy. You don’t go to Italy for a whole new Italy; you go to Italy for what has always been. Can you tell I’m getting older? Why stand, when you can sit?
I’m making white beans with a soffritto tonight, caramelized carrot, celery, onion and garlic, softened until your teeth wouldn’t even have to wake up to chew.
