You might be running a country

You might be running a country or overextended with the PTA or too deep in love to have time left over to make dessert.
This is what you need: Clafoutis. Pull your courage up by the bootstraps and step in the egg rising ring. It’s done in a minute.
Preheat the oven to 350 degrees. Butter an oven proof dish that has 2″ sides. Dust with sugar. Whisk 3 room temperature eggs until frothy and then add 1/2 cup of sugar and a pinch of salt until combined. Add 3/4 cup of heavy cream and 3/4 cup of whole milk. Whisk until smooth. Add 1/2 cup of sifted flour and stir just until the flour is no longer visible. Layer whole, sugared cherries in the dish (or raspberries) and sprinkle with sugar. Pour over the batter, getting it to as close to the top as you can before your heart starts racing. Bake for about 40 minutes or until the moment a knife comes out clean. Sift lightly with powdered sugar. (Julia C. pours a tiny bit of batter along the bottom of the baking dish, bakes it just til set, then continues. I always decide I have no time.)
